2Leeks sliced very finely, use only the white and lighter part of the leek
Juice of 1 lemon
3tbspExtra virgin olive oil
Salt and pepper
2Ripe tomatoes diced
2Large handfuls of parsley
Instructions
Using a fork whisk together lemon , oil , salt and pepper . add all ingredients to a bowl and combine together and serve. This is lovely with avocado and leaves
