Raw Broccoli Salad with creamy tahini citrus dressing

I love really substantial salads with dense dressings that fill me up. This is so simple to prepare and will last in the fridge for 2 or 3 days. The dressing is a recipe that I learned from the Love Chefs years ago.It’s a firm favourite that I make at least once a week .

Ingredients
  

For salad

  • 3 Grated carrots
  • 1/2 A head of broccoli broken into tiny florets
  • 1 Apple, diced
  • 1/2 A small red onion slice finely
  • Large handful of raisins

Dressing

    Add the following ingredients to your blender, you may need to add more water to get the desired consistency

    • 4 tbsp Tahini
    • 1 Lemon juiced
    • 1 Date
    • 1 Clove garlic
    • 1 tbsp Olive oil
    • 5 tbsp Water
    • Handful of fresh herbs,dill/parsley/coriander

    Instructions
     

    • Add the salad ingredients to a large bowl and mix in the tahini dressing to cover.Season with salt and pepper
    • This is lovely with leaves and a sweet jacket potato.
