Broccoli Umami Green Soup
This is one of my absolute favourites. I make a massive pan of this every week. Its really easy and quick and if you don’t have fresh broccoli you can substitute frozen and its equally as good, Very moreish and perfect comfort food.
Ingredients
- 1 Medium to large onion roughly chopped
- 1 Clove garlic crushed
- 1 Large head of broccoli chopped. Use the stalk too. Don’t waste any !
- 2 tbsp Engevita nutritional yeast
- 1 tbsp coconut oil
- Salt and pepper to season
- 500 ml good quality stock eg Marigold Boullion
Instructions
- Heat the coconut oil in a large pan
- Add in onions and cook until softened
- Add in garlic and cook for 2 minutes
- Add in stock and all other ingredients
- Cook until broccoli has softened 10 minutes
- Blend soup to a smooth consistency and return to pan , season and serve
