Creamy and Warming Raw Carrot Soup
This is a simple and comforting soup to make. It can be served warm in the colder months.I juice my carrots first before blending with the other ingredients but you can also have the carrots pureed in the blender .
Ingredients
Soup Base
- 2 cups Carrot juice
- ½ 1 avocado
- 1 tsp Curry powder
- 1 Clove of garlic (optional)
- ½ Lemon juiced
- 1 cm Fresh ginger peeled
- 1 tbs flax oil or extra virgin olive oil ( optional)
- Salt and pepper to season
Topping
- Small chopped up piecesof tomato, red pepper and cucumber
- Shredded freshcoriander
- Red chilli flakes
Instructions
- Juice your carrots orchop up 2 carrots and add to the blender ( you will need some water 2cups )
- Add all of the remaining ingredients except for the avocado and blend
- Finally add in the avocado at the end and blend until incorporated( too much blending of avocado can make it a bit fluffy so keep to a minimum).Your soup should be thick and creamy.
- Flavour check, season and add more curry powder if desired
To serve
- Warm gently in a pan on the stove if you prefer it warm. To keep it in a raw state allow it to only get as hot as you can put your finger in, think bath water hot )
- Serve in a bowl that you have warmed by filling with hot water from the kettle and allowing to warm for 5 minutes . Tip the water and add the soup to the bowl and sprinkle on topping if desired .
